Use sweet onions such as Vidalia, Oso-Sweet, Walla Walla, or Texas sweet for best flavor.
Ingredients:
- 1 tbsp canola or corn oil
- 1 onion cut into wedges
- 1/2 tsp grated gingerroot
- 1 tbsp sesame seeds
- 1 tbsp lite soy sauce
- 1 1/2 tsp dark-roasted sesame oil
- 1 lb zucchini, cut into 1-inch pieces
Instructions:
- Heat the canola oil or corn oil in a large nonstick skillet over medium heat
- Add the zucchini, onion and gingerrot. Stir-fry about 5 to 8 minutes.
- Sprinkle with sesame seeds, soy sauce, and sesame oil. Toss to blend.
